Apples and Honey




                

My beautiful K1 and her husband(K1-in-law) are visiting us in New Jersey!  They have brought their wonderful smiles and incredible talent for making organic sorbet from Florida to the Garden State for just a few days.  They founded  REAL SORBET in Florida earlier this year, after moving there from Brooklyn.
REAL SORBET is a small batch sorbet company which uses local, organic fruit that is in season.   That being said, they have created a unique sorbet flavor for New Jersey: Apple and Honey Sorbet with local Jersey Apples and Honey!  I got to be part of this creative adventure from the apple picking to the first tasting....cheers!  Hope you enjoy the images and their new sorbet flavor.......

Ingredients.......



Makes One Quart
*three medium apple
*one-half cup of local, raw honey
*one cup of filtered water
*one-half cup of pure cane sugar
*pinch of sea salt
*ice-cream/sorbet maker


Press honey through a mesh. Add cup of water to small saucepan and heat over high-heat, wait 30 seconds and then add the sugar and whisk until sugar particles disappear (approx. 2 mins).



Remove from heat and when slightly cooled pour into a bowl and place bowl into a ice bath and let it cool.

                 

Peel,core and chop apples and place in a blender and puree until smooth. 
                 
               


                 

Pour apple mixture through a fine mesh sieve and press the apple through until almost all the liquid has been extracted.  

Add the honey.


                 
Add sugar/water mixture once cooled and then add salt.




                 
Refrigerate mixture for an hour or overnight.

Place mixture into ice-cream/sorbet maker and process according to machine directions...approximately 15 mins.


                 

Put sorbet into tupperware container and freeze 3 to 4 hours before serving.  Bon Appetit!
