|arugula-apple salad (from Bon Appetit)|
this is really quick to make....combine two handfuls of arugula, one-half an apple sliced, two Tablespoons of fresh lemon juice and two Tablespoons of olive oil....salt and pepper if you think it needs it.
Michael and I had a baguette topped with sauteed shallots and gruyere (melted in the broiler ) with the salad. I even topped the baguette with the salad and it was delicious.
The kids liked the baguette and the apple slices, but were not fans of the arugula.
