emma gave me this wonderful cookbook for Christmas...already many tabs and fingerprints on the cover!

made this emmentaler on rye with sweet and sour red onions for Michael yesterday...wonderfully good...saute  a large, thinly sliced red onion in one Tablespoon of olive oil and one Tablespoon of butter for 5 minutes...add 2 teaspoons of brown sugar and 1/4 teaspoon of salt and cook at med-low for 10 minutes....add one Tablespoon of balsamic vinegar and simmer for 1 to 2 minutes until the onion mixture thickens...let it cool a bit and spread a generous amount on your rye ...add the cheese and grill.
