bread dumplings in chicken broth...from a tessa kiros recipe...perfect for a snowy saturday tear up 4 slices of day old bread(crusts removed) and soak in about 2/3 cup milk saute a finely sliced shallot in one tablespoon of butter add one chopped garlic clove and 4 oz. of finely sliced pancetta ( I used bacon)and saute until golden...cool slightly and add to mushy bread add to the bread one lightly beaten egg, 3-4 tablespoons of parmesan cheese, 3 tablespoons chopped parsley, a pinch of nutmeg and salt and pepper use your hands to mash it all up and form about 20 smallish dumplings...put on a plate, cover and refrigerate for 30 min. heat up your chicken broth to a boil and drop the babies in and cook for 8-10 mins.
*if your bread mash is too mushy...mix in more bread bits before forming into balls* |
